The Only Right Way To Cook Steak

Cookbook author Paul Kita is adamant: the “only” correct way to cook a steak doesn’t involve a grill, but instead a cast iron skillet. While this might make some heads explode, here’s how he says you get the best hunk of meat:

  • Turn the heat on high, open some windows, and turn on the vent. Things will get smoky.
  • Season it “liberally” on both sides with kosher salt and freshly ground pepper.
  • When the pan starts smoking, add a tablespoon of canola oil and swirl it. Then, put on the steak and flip it every minute. For medium rare, you’re talking a total of six minutes.
  • Put the meat on a plate to let it “rest” for five minutes while you whip up a sauce.
  • Take the “flavorful liquid” of your choice – like wine, beer, or beef stock – and pour it into that hot pan, stirring it with a wooden spoon while you pick off those meat bits holding onto the pan for dear life. Then, add a tablespoon of butter and some salt and pepper.
